Under René Redzepi’s leadership, Noma has spearheaded an innovative, experimental regional and seasonal cuisine, and today stands as an iconic example of experience design. Throughout, the restaurant has managed to preserve an unpretentious, community-oriented approach to the hype in an elitist gourmet market, as demonstrated most recently this February, when the 62-year-old dishwasher, Ali Sonko, was made a partner at Noma. The visionary restaurant also shows an innovative drive outside the kitchen. The restaurant has moved out of its previous setting in Nordatlantens Brygge, and at the time of writing, Noma is a pop-up restaurant in Tulum, Mexico, but it is scheduled to reopen on Refshaleøen in Copenhagen on 1 December.
